Pumpkin halwa

Ingredients:

  1. peeled pumpkin cut into 1/2 "dices,
  2. cinnamon stick ---1 inch,
  3. 4 tbsp Unsalted butter/ghee,
  4. 2 tbsp chopped, roasted almonds,
  5. 50 gm raisins,
  6. Sugar 150gms,
  7. water to cook,

Preparation:

  1. Cook the pumpkin, water and, cinnamon in a covered saucepan and cook until tender.
  2. Drain and mash the pumpkin.
  3. In a large pan, heat 4 tbsp of unsalted butter/ghee until hot. Add the pumpkin, stirring, continuously. Allow the puree to reduce and thicken and darken, for about 10 minutes. Stir in enough sugar to sweeten.
  4. Continue cooking until the halwa reduces into, a deep amber & glossy mixture.
  5. Spoon into a serving dish & decorate with assorted dried fruits and, shreds of roasted coconut.
